Over low heat, whisk all sauce ingredients (except the xanthan gum) to a pot and set aside once combined.
Cut pork into 2"cubes and pat dry with a kitchen towel. Season with salt and pepper to taste.
Dip the pork into the whisked egg mixture and then the unflavored whey protein.
Repeat until all of the pork is coated.
In a large pan, heat neutral oil over medium high heat.
Once oil is sizzling, fry pork for about 2-3 minutes per side once golden. Work in batches, be careful not to overcrowd the pan!
After frying the pork, discard the oil and add 1 tbsp of oil to the pan. Add the onion, red pepper and green pepper to the pan. Fry for about 2 minutes.
Add the fried pork and sauce to the pan with the vegetables and sprinkle the xanthan gum,
Stir together until the sauce thickens and all ingredients are combined. About 1-2 minutes.
